| Passion Fruit Margaritas |

| 1 pound fresh passion fruit (about 8)
3 cups ice cubes 3/4 cup white tequila 1/4 cup sugar |
| Halve passion fruits and scoop pulp and seeds into a blender. Blend pulp briefly (seeds should still be in large pieces). Force fruit through a fine sieve into a measuring cup and discard solids. In a blender, blend 1/2 cup puree with remaining ingredients until smooth. Pour drink into 4 stemmed glasses. Serves 4. From Gourmet July 1998 |
